Whip up delicious black bean spinach burritos in just 15 min Perfect for a fast meal satisfying healthy for any occasion
1 can (15 oz) black beans, rinsed and drained
2 cups fresh spinach, roughly chopped
1 cup shredded cheese (cheddar or pepper jack)
½ cup corn (canned or frozen)
1 teaspoon cumin
1 teaspoon chili powder
1 tablespoon olive oil
Salt and pepper to taste
4 large flour tortillas
Optional: Salsa, avocado, sour cream for toppings
In a large skillet, heat the olive oil over medium heat.
Add the chopped spinach to the skillet and sauté for about 2-3 minutes until wilted.
Stir in the black beans and corn, cooking for another 2 minutes until warm.
Sprinkle in the cumin, chili powder, and salt and pepper, mixing well.
Warm the flour tortillas for 15-30 seconds to make them pliable.
On each tortilla, spoon a generous amount of the bean and spinach mixture, adding cheese on top.
Fold the sides of the tortilla inwards, then roll from the bottom up to secure.
If desired, crisp the burritos seam-side down in the skillet for 1-2 minutes per side.
