  • 1 can (15 oz) black beans, rinsed and drained
  • 2 cups fresh spinach, roughly chopped
  • 1 cup shredded cheese (cheddar or pepper jack)
  • ½ cup corn (canned or frozen)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Optional: Salsa, avocado, sour cream for toppings

  • Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the chopped spinach to the skillet and sauté for about 2-3 minutes until wilted.
  • Stir in the black beans and corn, cooking for another 2 minutes until warm.
  • Sprinkle in the cumin, chili powder, and salt and pepper, mixing well.
  • Warm the flour tortillas for 15-30 seconds to make them pliable.
  • On each tortilla, spoon a generous amount of the bean and spinach mixture, adding cheese on top.
  • Fold the sides of the tortilla inwards, then roll from the bottom up to secure.
  • If desired, crisp the burritos seam-side down in the skillet for 1-2 minutes per side.
