1 green onion

chopped (for garnish)


Instructions

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Add the diced onion and bell pepper, cooking until softened, about 3-4 minutes.
  • Push the vegetables to the side of the pan and pour in the beaten eggs, scrambling until fully cooked.
  • Mix the cooked rice into the skillet, adding the peas and carrots, soy sauce, salt, and black pepper, stirring until well combined and heated through, about 5 minutes.
  • Garnish with chopped green onion before serving.

Notes
