2 cups cooked rice (preferably day-old)
2 eggs
beaten
1/2 cup diced onion
1/2 cup diced bell pepper
1/2 cup frozen peas and carrots
2 tbsp vegetable oil
1 tbsp soy sauce
1/2 tsp salt
1/4 tsp black pepper
1 green onion
chopped (for garnish)
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the diced onion and bell pepper, cooking until softened, about 3-4 minutes.
- Push the vegetables to the side of the pan and pour in the beaten eggs, scrambling until fully cooked.
- Mix the cooked rice into the skillet, adding the peas and carrots, soy sauce, salt, and black pepper, stirring until well combined and heated through, about 5 minutes.
- Garnish with chopped green onion before serving.
Notes
For best results, use day-old rice as it is drier and prevents the dish from becoming mushy.
