Description

Ingredients

1 pound shrimp, peeled and deveined

1 tablespoon olive oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small red onion, sliced

2 teaspoons fajita seasoning

1/2 teaspoon garlic powder

Juice of 1 lime

2 cups cooked rice (white, brown, or cauliflower)

Fresh cilantro, chopped (for garnish)

Optional toppings: avocado, salsa, sour cream


Instructions

1. In a bowl, toss shrimp with fajita seasoning, garlic powder, and lime juice.

2. Heat olive oil in a large skillet over medium-high heat.

3. Add bell peppers and onions; sauté for 4–5 minutes until slightly charred and tender. Remove and set aside.

4. In the same skillet, cook shrimp for 3–4 minutes until pink and cooked through.

5. Warm cooked rice and divide it among bowls.

6. Top each bowl with shrimp, sautéed peppers and onions.

7. Garnish with fresh cilantro and optional toppings.

8. Serve immediately.

Notes

Use pre-cooked rice to cut down prep time.

Swap shrimp with chicken or tofu if desired.
