  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

These vibrant rice bowls combine all the flavors of a classic Greek gyro—juicy spiced meat, creamy tzatziki, crisp veggies, and herbed rice—in a healthy, mess-free bowl that’s ready in under 30 minutes!

Ingredients

Scale

For the Gyro-Style Meat:

  • 1 lb ground lamb, beef, or chicken

  • 1 tsp dried oregano

  • 1/2 tsp garlic powder

  • 1/2 tsp cumin

  • 1 tbsp olive oil

  • Salt and pepper, to taste

For the Tzatziki Sauce:

  • 1 cup Greek yogurt

  • 1/2 cucumber, grated and drained

  • 1 garlic clove, minced

  • 1 tbsp lemon juice

  • 1 tbsp chopped fresh dill (or 1/2 tsp dried)

  • Salt, to taste

For the Bowls:

  • 2 cups cooked rice (white, brown, or lemon herb)

  • 1 cup cherry tomatoes, halved

  • 1/2 red onion, thinly sliced

  • 1/2 cup crumbled feta

  • Fresh parsley or dill (optional)

Instructions

  • Cook Meat: Heat olive oil in a skillet. Add meat, oregano, garlic powder, cumin, salt, and pepper. Cook until browned and cooked through (8–10 minutes).

  • Make Tzatziki: Mix yogurt, cucumber, garlic, lemon juice, dill, and salt. Chill until ready to serve.

  • Assemble Bowls: Divide rice among bowls. Top with cooked meat, tomatoes, onion, feta, and a generous dollop of tzatziki. Garnish with herbs if desired.

Notes

  • Swap rice for quinoa or cauliflower rice for a lighter version.

  • Use store-bought tzatziki in a pinch—but homemade tastes fresher!

  • Add kalamata olives or sliced cucumbers for extra crunch.
