1 lb ground lamb, beef, or chicken
-
1 tsp dried oregano
-
1/2 tsp garlic powder
-
1/2 tsp cumin
-
1 tbsp olive oil
-
Salt and pepper, to taste
For the Tzatziki Sauce:
-
1 cup Greek yogurt
-
1/2 cucumber, grated and drained
-
1 garlic clove, minced
-
1 tbsp lemon juice
-
1 tbsp chopped fresh dill (or 1/2 tsp dried)
-
Salt, to taste
For the Bowls:
-
2 cups cooked rice (white, brown, or lemon herb)
-
1 cup cherry tomatoes, halved
-
1/2 red onion, thinly sliced
-
1/2 cup crumbled feta
-
Fresh parsley or dill (optional)
Instructions
-
Cook Meat: Heat olive oil in a skillet. Add meat, oregano, garlic powder, cumin, salt, and pepper. Cook until browned and cooked through (8–10 minutes).
-
Make Tzatziki: Mix yogurt, cucumber, garlic, lemon juice, dill, and salt. Chill until ready to serve.
-
Assemble Bowls: Divide rice among bowls. Top with cooked meat, tomatoes, onion, feta, and a generous dollop of tzatziki. Garnish with herbs if desired.
Notes
-
Swap rice for quinoa or cauliflower rice for a lighter version.
-
Use store-bought tzatziki in a pinch—but homemade tastes fresher!
-
Add kalamata olives or sliced cucumbers for extra crunch.
