4 cups of cubed, seedless watermelon (about half a medium watermelon)
1 tablespoon of lime juice (fresh is best for a zesty kick!)
2–3 tablespoons of honey or maple syrup (adjust based on your sweetness preference)
Instructions
Cut your watermelon into large chunks, removing the rind and any seeds. Place the chunks in a bowl and refrigerate for at least 1 hour.
Once chilled, throw those watermelon chunks into a blender or food processor. Add the lime juice and honey (or maple syrup). Pulse until you have a smooth, homogenous mixture.
Pour the mixture into a shallow container or a loaf pan, spreading it evenly. Cover with a lid or plastic wrap.
Place the container in the freezer and let it sit for 4-6 hours, or until it’s firm. Optionally, stir it with a fork every hour to break up ice crystals for creamier texture.
Once it’s frozen solid, let it sit at room temperature for about 5 minutes before scooping.
