  • Cut your watermelon into large chunks, removing the rind and any seeds. Place the chunks in a bowl and refrigerate for at least 1 hour.
  • Once chilled, throw those watermelon chunks into a blender or food processor. Add the lime juice and honey (or maple syrup). Pulse until you have a smooth, homogenous mixture.
  • Pour the mixture into a shallow container or a loaf pan, spreading it evenly. Cover with a lid or plastic wrap.
  • Place the container in the freezer and let it sit for 4-6 hours, or until it’s firm. Optionally, stir it with a fork every hour to break up ice crystals for creamier texture.
  • Once it’s frozen solid, let it sit at room temperature for about 5 minutes before scooping.
