  • 2 lbs sweet potatoes, peeled and cubed
  • 3 tbsp unsalted butter
  • 1/2 cup whole milk (or plant-based alternative)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Salt to taste
  • 1.5 lbs fresh green beans, trimmed
  • 4 cloves garlic, minced
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp lemon juice

  • Instructions

  • Preheat oven to 400°F (200°C). Toss halved Brussels sprouts with olive oil, maple syrup, salt, and pepper in a bowl. Spread on a baking sheet and roast for 25-30 minutes.
  • Place cubed sweet potatoes in a pot, cover with water, and boil. Reduce heat and simmer for 15-20 minutes until tender. Drain and mash with butter, milk, cinnamon, nutmeg, and salt.
  • Toss green beans with olive oil, minced garlic, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes. Squeeze lemon juice before serving.
