1.5 lbs Brussels sprouts, trimmed and halved
3 tbsp olive oil
2 tbsp pure maple syrup
Salt and pepper to taste
1/4 cup pecans, roughly chopped (optional)
2 lbs sweet potatoes, peeled and cubed
3 tbsp unsalted butter
1/2 cup whole milk (or plant-based alternative)
1 tsp cinnamon
1/2 tsp nutmeg
Salt to taste
1.5 lbs fresh green beans, trimmed
4 cloves garlic, minced
3 tbsp olive oil
Salt and pepper to taste
1 tbsp lemon juice
Instructions
Preheat oven to 400°F (200°C). Toss halved Brussels sprouts with olive oil, maple syrup, salt, and pepper in a bowl. Spread on a baking sheet and roast for 25-30 minutes.
Place cubed sweet potatoes in a pot, cover with water, and boil. Reduce heat and simmer for 15-20 minutes until tender. Drain and mash with butter, milk, cinnamon, nutmeg, and salt.
Toss green beans with olive oil, minced garlic, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes. Squeeze lemon juice before serving.
