1 pound fresh green beans, trimmed
2 tablespoons unsalted butter (or olive oil for a vegan option)
2–3 cloves of garlic, minced
½ cup sliced almonds
Zest of 1 lemon
Juice of ½ lemon
Salt and pepper, to taste
Optional: a pinch of red pepper flakes
Rinse the green beans under cold water and trim the ends.
Bring a large pot of salted water to a boil. Add the green beans and blanch for about 3-4 minutes. Drain and transfer to an ice bath.
In a large skillet, melt the butter over medium heat, add the minced garlic and sliced almonds, and sauté for 1-2 minutes.
Toss in the blanched green beans, squeeze the lemon juice, add the zest, and season with salt and pepper. Add red pepper flakes if desired.
Cook everything together for another 3-4 minutes until heated through.
Transfer to a serving dish and garnish with additional almond slices and lemon zest.
