1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
4 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
4 large eggs
1 cup sour cream
½ cup heavy cream
⅓ cup cocoa powder
½ cup chocolate syrup
¼ cup white chocolate chips
Instructions
Preheat your oven to 325°F (160°C).
In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press this mixture into the bottom of a 9-inch springform pan.
Bake the crust for about 10 minutes or until golden. Remove from the oven and let it cool completely.
In a large mixing bowl, beat the softened cream cheese on medium speed until smooth. Add the sugar and vanilla, and mix until fluffy.
Add the eggs, one at a time, mixing well after each addition.
Mix in the sour cream and heavy cream until well combined. Gently fold in the cocoa powder.
Pour the filling onto the cooled crust and spread it evenly.
Bake for 50-60 minutes. The edges should be set, but the center might jiggle. Turn off the oven and crack the door for an hour to cool.
Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Just before serving, drizzle chocolate syrup in a circular motion on top. Use a toothpick to create a spiderweb design.
