1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
2 limes, juiced
1 teaspoon cumin
2 avocados, diced
1 cup cherry tomatoes, halved
1 small red onion, finely chopped
1 bell pepper, diced
1/4 cup fresh cilantro, chopped
Salt and pepper to taste
Instructions
Start by marinating the shrimp. In a bowl, combine the shrimp, olive oil, lime juice, cumin, salt, and pepper. Let it sit for about 15-20 minutes.
While the shrimp are marinating, chop the avocados, cherry tomatoes, red onion, and bell pepper. Toss them into a large mixing bowl and add the chopped cilantro.
Heat a skillet over medium-high heat and cook the shrimp for about 2-3 minutes on each side until they turn pink and opaque.
