1 lb ground beef
1/2 cup breadcrumbs
1/4 cup finely chopped onion
1 clove garlic, minced
1/4 cup milk
1 egg
1 tsp salt
1/2 tsp black pepper
1 tsp dried parsley
8 oz egg noodles
2 cups chicken broth
1 cup heavy cream
1 cup frozen peas
1 tbsp olive oil
Salt and pepper, to taste
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, milk, egg, salt, pepper, and parsley. Mix gently with your hands until just combined.
Form the mixture into golf ball-sized meatballs and place them on a baking sheet lined with parchment paper.
Bake the meatballs for about 20 minutes, or until cooked through and nicely browned.
In a large pot of salted water, cook the egg noodles according to package directions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add chicken broth and bring to a gentle simmer. Stir in heavy cream and simmer for another 5 minutes.
Stir in frozen peas and season the sauce with salt and pepper to taste.
Gently add the baked meatballs and cooked noodles to the sauce. Toss everything together until well-coated.
Serve immediately while warm and garnish with extra parsley.
