  • 1 tsp vanilla extract

  • ½ cup sour cream

Apple Layer:

  • 2 large apples, peeled and diced

  • 2 tbsp brown sugar

  • 1 tsp ground cinnamon

  • ½ tsp nutmeg

Crisp Topping:

  • ½ cup rolled oats

  • ½ cup flour

  • ⅓ cup brown sugar

  • ½ tsp cinnamon

  • 4 tbsp butter, melted


Instructions

  1. Preheat oven to 325°F (163°C). Line a springform pan with parchment or lightly grease it.

  2. Make crust: Mix graham crumbs, sugar, and butter. Press into the pan and bake for 10 minutes.

  3. Prepare cheesecake: Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla and sour cream. Pour over crust.

  4. Make apple layer: Toss apples with brown sugar, cinnamon, and nutmeg. Layer evenly over cheesecake batter.

  5. Make crisp topping: Mix oats, flour, brown sugar, cinnamon, and melted butter. Sprinkle over apples.

  6. Bake for 55–65 minutes, or until edges are set and center is slightly jiggly. Cool completely and refrigerate for at least 4 hours or overnight.

  7. Serve chilled, optionally with whipped cream or caramel drizzle.
