1 tablespoon lemon juice

— Cheesecake Filling —

16 oz (450g) cream cheese, softened

3/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/4 cup sour cream

— Crumble Topping —

1/2 cup all-purpose flour

1/3 cup brown sugar

1/4 cup unsalted butter, cold and cubed

1/2 teaspoon ground cinnamon


Instructions

1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.

2. Mix graham cracker crumbs, sugar, and melted butter. Press mixture firmly into the bottom of the pan to form crust.

3. In a bowl, toss apple slices with sugar, cinnamon, and lemon juice. Set aside.

4. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla and sour cream.

5. Spread half the cheesecake batter over the crust.

6. Layer the apple mixture evenly over the batter.

7. Spread the remaining cheesecake batter over the apples.

8. Combine flour, brown sugar, butter, and cinnamon for crumble topping. Use fingers or a pastry cutter to form crumbs.

9. Sprinkle crumble topping evenly over the cheesecake.

10. Bake for 60–70 minutes until the center is set and topping is golden.

11. Cool completely, then refrigerate for at least 4 hours before serving.

Notes

Use tart apples like Granny Smith for best flavor balance.
