Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a mixing bowl, combine the gluten-free flour, baking salt, monk fruit sweetener, and cinnamon.
- In another bowl, whisk together the large egg, unsweetened applesauce, melted butter or coconut oil, vanilla extract, and Táche pistachio milk.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the chopped apple and fresh blueberries gently.
- Pour the batter into the prepared loaf pan.
- Mix brown monk fruit, cinnamon, and ground pistachios for the topping, and sprinkle it over the batter.
- Bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Ensure all ingredients are gluten-free if necessary. You can substitute coconut oil for melted butter based on dietary preferences.
