1 pound ground turkey (lean is best for moist muffins)
1 cup grated apple (preferably Granny Smith for a tart kick)
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup breadcrumbs (preferably whole wheat)
1 egg, lightly beaten
1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup ketchup (plus more for topping, if desired)
Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
In a large mixing bowl, combine ground turkey, grated apple, chopped onion, minced garlic, breadcrumbs, egg, chopped sage, salt, pepper, and ketchup. Mix gently until combined.
Divide the mixture evenly among the muffin cups, packing them without overflowing.
Optionally, spread a little ketchup on top of each muffin.
Bake for 20-25 minutes until internal temperature reaches 165°F (74°C) and tops are golden brown.
Cool for a few minutes before transferring to a wire rack.
