Ingredients
Scale
1 ½ cups of all-purpose flour (or gluten-free flour blend)
1 teaspoon of baking powder
½ teaspoon of baking soda
¼ teaspoon of salt
½ cup of unsalted butter, softened to room temperature
1 cup of granulated sugar
2 large eggs
1 teaspoon of vanilla extract
½ cup of buttermilk (or yogurt for a twist)
2 cups of fresh apricots, pitted and quartered
Powdered sugar for dusting (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
In a bowl, whisk together the flour, baking powder, baking soda, and salt.
In another bowl, beat together the softened butter and granulated sugar until light and fluffy—about 3 minutes.
Introduce the eggs one at a time, mixing thoroughly between each addition. Finally, stir in the vanilla extract.
Alternate adding the flour mixture and buttermilk to the butter mix, beginning and ending with the flour.
Gently fold in the quartered apricots.
Pour the batter into your prepared cake pan, smoothing the top with a spatula.
Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
