4 cups of fresh apricots, pitted and halved (about 8 to 10 apricots)
1/4 cup of granulated sugar
1 tablespoon of lemon juice
1 teaspoon of vanilla extract
1 teaspoon of ground cinnamon
1 cup of all-purpose flour
1/2 cup of brown sugar
1/2 cup of rolled oats
1/4 teaspoon of salt
1/2 cup of cold unsalted butter, cut into cubes
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, toss the halved apricots with granulated sugar, lemon juice, vanilla extract, and cinnamon until everything is well coated. Spread the mixture into a lightly greased 9×13 baking dish.
In another bowl, mix together the flour, brown sugar, rolled oats, and salt.
Add the cubed butter into the flour mixture. Blend until the mixture resembles coarse crumbs.
