Ingredients

  • 1 lb (450g) chicken breast, diced

  • Salt & black pepper, to taste

  • 1 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 tsp Italian seasoning

  • 1 (16 oz) package potato gnocchi

  • 1 ½ cups chicken broth

  • 1 cup heavy cream

  • 1 cup shredded Asiago cheese

  • 2 cups baby spinach

  • Optional: chopped parsley, for garnish


Instructions

  • Cook chicken: In a large skillet over medium heat, heat olive oil. Season chicken with salt and pepper, then cook until browned and cooked through. Set aside.

  • Sauté garlic: In the same skillet, add garlic and Italian seasoning. Cook for 1 minute until fragrant.

  • Add gnocchi and broth: Stir in gnocchi and chicken broth. Simmer for 5 minutes or until gnocchi is tender.

  • Make it creamy: Stir in heavy cream and shredded Asiago cheese. Mix until melted and creamy.

  • Finish it off: Add baby spinach and cooked chicken back into the skillet. Stir until spinach wilts and everything is coated in sauce.

  • Serve: Garnish with parsley if desired and serve hot!
