Ingredients

  • 8 ounces of rice noodles
  • 1 cup of shredded carrots
  • 1 cup of thinly sliced bell peppers
  • 1 cup of thinly sliced cucumbers
  • 1 cup of shredded red cabbage
  • 1/2 cup of chopped green onions
  • 1/4 cup of chopped fresh cilantro
  • 1/4 cup of toasted sesame seeds
  • 1/2 cup of peanut butter
  • 2 tablespoons of soy sauce
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of honey
  • 1 teaspoon of grated ginger
  • 1 clove of minced garlic
  • 1 tablespoon of sesame oil
  • Optional: Sriracha or chili flakes for heat

  • Instructions

  • Cook the noodles by bringing a pot of water to a boil. Add the rice noodles and cook according to package instructions (5-7 minutes). Drain and rinse under cold water.
  • While the noodles are cooking, slice the bell peppers, cucumbers, and shred the carrots and cabbage. Chop green onions and fresh cilantro.
  • In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, ginger, garlic, and sesame oil. Add Sriracha or chili flakes if desired.
  • In a large bowl, combine the cooled noodles with the vegetables. Pour dressing over and toss gently to combine.
  • Sprinkle toasted sesame seeds and extra cilantro on top.
  • If you have time, let the salad chill in the fridge for 30 minutes for flavors to meld.
