8 ounces of rice noodles
1 cup of shredded carrots
1 cup of thinly sliced bell peppers
1 cup of thinly sliced cucumbers
1 cup of shredded red cabbage
1/2 cup of chopped green onions
1/4 cup of chopped fresh cilantro
1/4 cup of toasted sesame seeds
1/2 cup of peanut butter
2 tablespoons of soy sauce
2 tablespoons of rice vinegar
1 tablespoon of honey
1 teaspoon of grated ginger
1 clove of minced garlic
1 tablespoon of sesame oil
Optional: Sriracha or chili flakes for heat
Instructions
Cook the noodles by bringing a pot of water to a boil. Add the rice noodles and cook according to package instructions (5-7 minutes). Drain and rinse under cold water.
While the noodles are cooking, slice the bell peppers, cucumbers, and shred the carrots and cabbage. Chop green onions and fresh cilantro.
In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, ginger, garlic, and sesame oil. Add Sriracha or chili flakes if desired.
In a large bowl, combine the cooled noodles with the vegetables. Pour dressing over and toss gently to combine.
Sprinkle toasted sesame seeds and extra cilantro on top.
If you have time, let the salad chill in the fridge for 30 minutes for flavors to meld.
