1 lb organic ground turkey
½ cup cooked quinoa (or panko breadcrumbs)
2 green onions scallions minced
1 medium carrot grated and chopped finely (about ½ cup)
1 tbsp grated ginger
1 tbsp lime juice
2 tbsp soy sauce (or tamari)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the ground turkey, cooked quinoa, minced green onions, grated carrot, grated ginger, lime juice, and soy sauce.
- Mix until all ingredients are well incorporated.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place the meatballs on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes or until the meatballs are cooked through and golden brown.
