Scale
1 lb shrimp, peeled and deveined
2 tbsp coconut oil (or any cooking oil you prefer)
1 large onion, finely chopped
3 cloves garlic, minced
1-inch piece ginger, grated
2–3 green chilies, slit

Heat the coconut oil in a large skillet over medium heat. Once the oil is shimmering, add the chopped onions. Sauté them until they become translucent and slightly caramelized—about 5-7 minutes.
Add in the minced garlic, grated ginger, and green chilies. Stir for another 1-2 minutes until fragrant.
Sprinkle in the curry powder and turmeric. Stir continuously for about 30 seconds to toast the spices.
Pour in the coconut milk and stir until well combined.
Add the shrimp to the skillet, gently stirring to coat them. Cook for about 3-5 minutes until they are pink and tender.
Season with salt and let the curry simmer to meld the flavors.
