  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 23 green chilies, slit
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

  • Instructions

  • Heat the coconut oil in a large skillet over medium heat. Once the oil is shimmering, add the chopped onions. Sauté them until they become translucent and slightly caramelized—about 5-7 minutes.
  • Add in the minced garlic, grated ginger, and green chilies. Stir for another 1-2 minutes until fragrant.
  • Sprinkle in the curry powder and turmeric. Stir continuously for about 30 seconds to toast the spices.
  • Pour in the coconut milk and stir until well combined.
  • Add the shrimp to the skillet, gently stirring to coat them. Cook for about 3-5 minutes until they are pink and tender.
  • Season with salt and let the curry simmer to meld the flavors.
  • Before serving, sprinkle chopped cilantro on top.
