rinsed and drained
2 tbsp olive oil or vegetable oil
1/2 yellow onion

2 cloves garlic
finely chopped
4 oz canned diced green chiles
1 tsp ground cumin
1/2 tsp green chile powder (optional)
1 tsp salt
1/2 cup vegetable broth
chicken broth
or water
Instructions
- In a large skillet, heat the olive or vegetable oil over medium heat.
- Add the diced onion and cook until soft and translucent, about 5 minutes.
- Stir in the garlic, and cook for an additional minute until fragrant.
- Add the canned diced green chiles, ground cumin, green chile powder (if using), and salt. Stir to combine.
- Add the rinsed pinto beans and broth (or water), stirring well to combine.
- Bring the mixture to a simmer and cook for about 20 minutes, allowing the flavors to meld.
- Adjust seasoning as needed, and serve warm.
