  • 1 tablespoon Cajun seasoning
  • 12 bay leaves
  • 1 pound smoked sausage, sliced
  • Salt and pepper, to taste
  • 4 cups cooked white rice
  • Chopped green onions, for garnish
  • Hot sauce, for serving (optional)

  • Instructions

  • Rinse and soak your beans in a large bowl with water for at least 8 hours or overnight.
  • In a large pot or dutch oven, heat olive oil or bacon drippings over medium heat.
  • Add diced onion, green bell pepper, and celery to the pot and sauté for 5-7 minutes until softened.
  • Stir in minced garlic and Cajun seasoning and cook for another minute.
  • Drain the soaked beans and add them to the pot along with 6 cups of water or broth and bay leaves.
  • Bring the mixture to a gentle boil, then reduce heat to low, cover, and let simmer for 1.5 to 2 hours.
  • After about an hour, stir in sliced smoked sausage and let simmer for another 30-45 minutes.
  • Remove bay leaves, add salt and pepper to taste, serve over white rice.
