1 pound dried red beans
6 cups water or chicken broth
2 tablespoons olive oil or bacon drippings
1 medium onion, diced
1 green bell pepper, diced
2 celery stalks, diced
3 cloves garlic, minced
1 tablespoon Cajun seasoning
1–2 bay leaves
1 pound smoked sausage, sliced
Salt and pepper, to taste
4 cups cooked white rice
Chopped green onions, for garnish
Hot sauce, for serving (optional)
Rinse and soak your beans in a large bowl with water for at least 8 hours or overnight.
In a large pot or dutch oven, heat olive oil or bacon drippings over medium heat.
Add diced onion, green bell pepper, and celery to the pot and sauté for 5-7 minutes until softened.
Stir in minced garlic and Cajun seasoning and cook for another minute.
Drain the soaked beans and add them to the pot along with 6 cups of water or broth and bay leaves.
Bring the mixture to a gentle boil, then reduce heat to low, cover, and let simmer for 1.5 to 2 hours.
After about an hour, stir in sliced smoked sausage and let simmer for another 30-45 minutes.
Remove bay leaves, add salt and pepper to taste, serve over white rice.
