Avocado Corn Salad with Grilled Shrimp is a vibrant, refreshing dish perfect for warm days. It blends sweet grilled corn, creamy avocado, juicy tomatoes, and zesty lime with perfectly seasoned shrimp for a flavor-packed summer salad.
Ingredients
1 lb large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon paprika
Salt and pepper to taste
**Salad:**
2 ears fresh corn, grilled and kernels cut off
1 avocado, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, finely diced
1/4 cup chopped fresh cilantro
Juice of 1 lime
1 tablespoon olive oil
Salt and pepper to taste
Instructions
1. Preheat grill or grill pan over medium-high heat.
2. Toss shrimp with olive oil, paprika, salt, and pepper.
3. Grill shrimp for 2–3 minutes per side until opaque and lightly charred. Set aside.
4. In a large bowl, combine grilled corn kernels, avocado, tomatoes, red onion, and cilantro.
5. In a small bowl, whisk lime juice, olive oil, salt, and pepper.
6. Drizzle dressing over salad and toss gently.
7. Top salad with grilled shrimp and serve immediately.
Notes
For added heat, sprinkle with chili flakes or add diced jalapeño.
Pairs well with tortilla chips or over a bed of greens.
Best served fresh but can be stored in the fridge for up to 1 day.
