8 oz (about 2 cups) of your favorite pasta
4 strips of bacon, cooked until crispy and chopped
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red bell pepper, chopped
1/4 cup red onion, finely chopped
1/2 cup shredded cheddar cheese
1 cup ranch dressing
Salt and pepper to taste
Fresh parsley or green onions, chopped, for garnish (optional)
In a large pot of salted boiling water, cook the pasta according to package directions until al dente. Drain and rinse with cold water.
While the pasta is cooking, fry the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate.
Chop your cherry tomatoes, cucumber, red bell pepper, and red onion into bite-sized pieces.
In a large bowl, combine the cooled pasta, chopped veggies, crispy bacon, and shredded cheddar cheese. Toss gently.
Pour the Ranch dressing over the pasta mixture and fold together until evenly coated.
