Ingredients
Scale
1 cup apple cider
1 cup all-purpose flour
1 cup whole wheat flour
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon allspice
1/2 teaspoon salt
2 large eggs
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/4 cup melted butter
1/2 cup granulated sugar (for coating)
1 teaspoon cinnamon (for coating)
Instructions
Preheat your oven to 350°F (175°C) and grease your donut pan generously.
In a small saucepan, bring the apple cider to a boil over medium heat. Let it simmer until it reduces to about 1/3 cup, which takes about 10-15 minutes.
In a large mixing bowl, whisk together the flours, sugar, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt.
In another bowl, beat the eggs and then mix in the reduced apple cider, oil, and vanilla extract until well combined.
Pour the wet mixture into the dry ingredients, and gently fold them together until just combined.
Using a piping bag or a spoon, fill the donut pan about 3/4 full.
Bake in your preheated oven for about 15-18 minutes, or until a toothpick inserted into the center comes out clean.
Let the donuts cool for about 5 minutes in the pan before transferring them to a wire rack. Dip each donut in the melted butter and then coat them in the cinnamon sugar mixture.
