Description
These Baked Buffalo Chicken Egg Rolls are a zesty and irresistible appetizer filled with shredded chicken, cheesy goodness, and a hint of Buffalo sauce, served with a refreshing Cilantro Lime Ranch dip.
Ingredients
1 1/2 cups cooked shredded chicken
1/3 cup plain greek yogurt
1/2 cup buffalo sauce plus more for serving
2 tablespoons chopped fresh chives
2 tablespoon dried parsley
2 teaspoon dried dill
1 teaspoon onion powder
1 teaspoon garlic powder
kosher salt
1 cup shredded cheddar cheese
1/4 cup crumbled blue cheese
20–22 square egg roll wrappers
1 cup sour cream or plain Greek yogurt
3/4 cup fresh cilantro finely chopped
1 tablespoon chopped fresh chives
1 teaspoon garlic powder
1 teaspoon onion powder
juice from 2 limes
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine cooked shredded chicken, Greek yogurt, buffalo sauce, chives, parsley, dill, onion powder, garlic powder, kosher salt, cheddar cheese, and blue cheese until well mixed.
- Lay an egg roll wrapper on a clean surface with one corner facing you. Place about 2-3 tablespoons of the chicken mixture in the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Repeat with remaining wrappers and filling.
- Place the rolled egg rolls on the prepared baking sheet. Lightly spray or brush them with oil. Bake for 20-25 minutes or until golden and crispy, flipping halfway through.
- While the egg rolls are baking, prepare the cilantro lime ranch by mixing sour cream or Greek yogurt, chopped cilantro, chives, garlic powder, onion powder, and lime juice in a bowl.
- Once the egg rolls are done, serve hot with additional buffalo sauce and cilantro lime ranch on the side for dipping.
Notes
Feel free to adjust the level of buffalo sauce for more or less heat. You can also customize the filling by adding other ingredients like diced bell peppers or celery for extra crunch.
