Description
This Baked Cajun Salmon is packed with bold spice and balanced by a smooth, refreshing avocado lime sauce. It’s healthy, flavorful, and perfect for an easy weeknight dinner.
Ingredients
4 salmon fillets (about 6 oz each)
1 tablespoon olive oil
1 tablespoon Cajun seasoning
Salt and pepper to taste
**Avocado Lime Sauce:**
1 ripe avocado
2 tablespoons Greek yogurt
2 tablespoons lime juice
1 tablespoon olive oil
1 garlic clove
Salt to taste
2 tablespoons water (to thin, as needed)
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Pat salmon fillets dry and place on the baking sheet.
3. Drizzle salmon with olive oil and rub with Cajun seasoning, salt, and pepper.
4. Bake for 12–15 minutes, or until salmon flakes easily with a fork.
5. While salmon bakes, blend avocado, Greek yogurt, lime juice, olive oil, garlic, and salt until smooth.
6. Add water gradually until desired consistency is reached.
7. Spoon sauce over baked salmon and serve immediately.
Notes
Use homemade or store-bought Cajun seasoning.
For extra heat, add a pinch of cayenne to the sauce.
Serve with rice, quinoa, or roasted vegetables.
