Description

Ingredients

2 pounds boneless skinless chicken breasts or tenders, cut into bite-sized pieces

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs

Cooking spray or olive oil


Instructions

1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

2. In a shallow bowl, combine panko, Parmesan, garlic powder, smoked paprika, salt, and pepper.

3. In another bowl, beat the eggs.

4. Dip each chicken piece into the eggs, then coat evenly with the breadcrumb mixture.

5. Place coated chicken nuggets on the baking sheet.

6. Lightly spray or brush nuggets with cooking oil for extra crispiness.

7. Bake for 15–20 minutes, turning halfway, until golden and cooked through.

8. Serve warm with your favorite dipping sauce.

Notes

Use chicken tenders for tender nuggets.

Add cayenne pepper for a spicy kick.

Store leftovers in an airtight container in the fridge up to 3 days.
