Ingredients

  • 1 lb white fish (cod, tilapia, or haddock), cut into strips
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • 2 eggs, beaten
  • ½ cup flour
  • Cooking spray or olive oil

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease.
  • Set up three bowls: one with flour, one with beaten eggs, and one with panko, Parmesan, paprika, garlic powder, salt, and pepper.
  • Dredge each fish strip in flour, dip in egg, then coat in the breadcrumb mixture.
  • Place on the prepared baking sheet and lightly spray with cooking spray.
  • Bake for 15-20 minutes, flipping halfway, until golden and crispy.
  • Serve with tartar sauce or lemon wedges.

Notes

  • Swap panko for crushed cornflakes for extra crunch.
  • Use an air fryer at 375°F for 10-12 minutes for an even crispier result.
  • Add cayenne for a spicier kick.
