  • 3 tablespoons olive oil
  • 4 cloves fresh garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley for garnish

  • Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and scrub the russet potatoes. You can peel them if you prefer.
  • Slice each potato in half lengthwise, then cut each half into 3-4 wedges.
  • In a large bowl, combine the potato wedges with olive oil, minced garlic, garlic powder, onion powder, paprika, Italian herbs, salt, and pepper. Toss to coat.
  • Sprinkle half of the grated Parmesan over the seasoned potato wedges and toss again.
  • Line a baking sheet with parchment paper and spread the potato wedges in a single layer.
  • Bake in the preheated oven for about 30-35 minutes, flipping halfway through.
  • In the last 5 minutes of baking, sprinkle the remaining Parmesan on top and return to the oven.
  • Remove from the oven, let cool slightly, garnish with fresh parsley, and serve immediately.
