4 large russet potatoes
3 tablespoons olive oil
4 cloves fresh garlic, minced
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
1 teaspoon dried Italian herbs
½ cup grated Parmesan cheese
Salt and pepper, to taste
Fresh parsley for garnish
Instructions
Preheat your oven to 425°F (220°C).
Wash and scrub the russet potatoes. You can peel them if you prefer.
Slice each potato in half lengthwise, then cut each half into 3-4 wedges.
In a large bowl, combine the potato wedges with olive oil, minced garlic, garlic powder, onion powder, paprika, Italian herbs, salt, and pepper. Toss to coat.
Sprinkle half of the grated Parmesan over the seasoned potato wedges and toss again.
Line a baking sheet with parchment paper and spread the potato wedges in a single layer.
Bake in the preheated oven for about 30-35 minutes, flipping halfway through.
In the last 5 minutes of baking, sprinkle the remaining Parmesan on top and return to the oven.
Remove from the oven, let cool slightly, garnish with fresh parsley, and serve immediately.
