Ingredients
1 1/2 cups vanilla wafer crumbs
1/4 cup sugar
1/4 cup unsalted butter
melted
3 (8 oz) packages cream cheese
softened
1 cup sour cream
1 cup powdered sugar
1 teaspoon vanilla extract
3 large eggs
1 (3.4 oz) box of instant banana pudding mix
1/2 cup milk
1/2 cup vanilla wafer crumbs for garnish
1/4 cup powdered sugar for glaze
1 tablespoon milk for glaze
Instructions
- Preheat your oven to 325°F (160°C) and grease a 9×13 inch baking dish.
- In a mixing bowl, combine 1 1/2 cups vanilla wafer crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish to form a crust.
- In another bowl, beat together the softened cream cheese, sour cream, 1 cup powdered sugar, and vanilla extract until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in the instant banana pudding mix and milk until well combined.
- Pour the cheesecake mixture over the prepared crust in the baking dish.
- Bake in the preheated oven for 30 minutes, or until the center is set and the edges are lightly browned.
- Allow the bars to cool completely in the pan before refrigerating for at least 4 hours or overnight.
- Once chilled, prepare the glaze by mixing 1/4 cup powdered sugar with 1 tablespoon milk until smooth. Drizzle over the cooled cheesecake bars.
- Garnish with 1/2 cup vanilla wafer crumbs and slice into squares before serving.
Notes
For best results, allow the cheesecake bars to chill overnight. The longer they sit, the more the flavors meld together.
