Ingredients

2 chicken breasts, cut into bite-size pieces

1/2 cup cornstarch

2 cups cooked white rice

1 cup shredded lettuce

1/2 cup shredded carrots

1/2 cucumber, sliced

Oil for frying
Bang Bang Sauce:

1/4 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha

1 tsp honey
Instructions

Make the sauce: Whisk mayo, sweet chili sauce, sriracha, and honey in a bowl. Set aside.

Cook the chicken: Coat chicken pieces in cornstarch. Fry in hot oil until golden and crispy. Drain on paper towels.

Assemble the bowls: Divide rice between bowls. Top with lettuce, carrots, cucumber, and crispy chicken.
