Ingredients

  • 2 chicken breasts, cut into bite-size pieces

  • 1/2 cup cornstarch

  • 2 cups cooked white rice

  • 1 cup shredded lettuce

  • 1/2 cup shredded carrots

  • 1/2 cucumber, sliced

  • 1/4 cup green onions, chopped

  • Oil for frying

Bang Bang Sauce:

  • 1/4 cup mayonnaise

  • 2 tbsp sweet chili sauce

  • 1 tbsp sriracha

  • 1 tsp honey


Instructions

  1. Make the sauce: Whisk mayo, sweet chili sauce, sriracha, and honey in a bowl. Set aside.

  2. Cook the chicken: Coat chicken pieces in cornstarch. Fry in hot oil until golden and crispy. Drain on paper towels.

  3. Assemble the bowls: Divide rice between bowls. Top with lettuce, carrots, cucumber, and crispy chicken.

  4. Drizzle & garnish: Pour bang bang sauce over chicken, then sprinkle green onions on top. Serve warm.

Notes

  • Use air fryer for a lighter version of the chicken.

  • Substitute rice with quinoa or cauliflower rice for a lower-carb option.
