A fresh twist on the classic Italian dish, this Basil Chicken Saltimbocca features tender chicken wrapped in prosciutto, seared to golden perfection, then topped with sweet burst tomatoes, creamy burrata, and fresh basil.
Ingredients

4 boneless, skinless chicken cutlets

8 slices prosciutto

1 tbsp olive oil

2 cups cherry tomatoes

1 garlic clove, minced

1/4 cup dry white wine or chicken broth

Fresh basil leaves

1 ball burrata cheese

Salt & pepper, to taste
Instructions

Wrap chicken: Season chicken with salt and pepper. Wrap each piece with 2 slices of prosciutto.

Sear: Heat olive oil in a skillet over medium-high heat. Sear chicken until golden and cooked through (about 4–5 minutes per side). Remove and keep warm.

Cook tomatoes: In the same pan, sauté garlic and cherry tomatoes until they begin to burst. Deglaze with wine or broth and simmer 2 minutes.

Assemble: Return chicken to pan, spoon tomatoes over top. Plate with torn burrata and fresh basil.
