1/2 cup ricotta cheese
1/4 cup basil pesto
1/4 cup grated Parmesan cheese

2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the ricotta cheese, basil pesto, and grated Parmesan cheese until well combined.
- Season the chicken breasts with salt and pepper. Carefully cut a pocket into each breast.
- Fill each chicken pocket with the ricotta pesto mixture.
- In a skillet, heat olive oil over medium heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side.
- Transfer the seared chicken to a baking dish and bake for 20-25 minutes or until the chicken is cooked through.
