This BBQ Chicken Mac and Cheese combines the creamy goodness of macaroni and cheese with the bold flavors of barbecue chicken, creating a hearty dish that’s perfect for family dinners.
Ingredients
1 lb (450g) chicken breast cooked and shredded
1 tablespoon olive oil
8 oz (225g) elbow macaroni or pasta of choice
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup milk (low-fat preferred)
1/2 cup BBQ sauce (your favorite brand)
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
Fresh parsley chopped (optional for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the elbow macaroni according to package instructions until al dente; drain and set aside.
- In a large skillet, heat olive oil over medium heat, then add the shredded chicken, BBQ sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook until heated through.
- In a large mixing bowl, combine the cooked macaroni, chicken mixture, milk, cheddar cheese, and mozzarella cheese. Stir until well combined.
- Transfer the mixture to a greased baking dish and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
