For the Chicken Skewers:

  • 1 lb boneless chicken breast or thighs, cubed

  • 1/2 cup BBQ sauce (plus more for brushing)

  • 1 tbsp olive oil

  • Salt & pepper, to taste

  • Wooden skewers (soaked in water if grilling)

For the Salad:

  • 4 cups mixed greens

  • 1 cup cherry tomatoes, halved

  • 1/2 cucumber, sliced

  • 1/4 red onion, thinly sliced

  • 1/2 cup grilled corn kernels (optional)

  • 1/4 cup crumbled feta or shredded cheddar (optional)

  • Ranch or vinaigrette dressing, to serve


Instructions

  1. Marinate the Chicken: Toss chicken cubes with BBQ sauce, olive oil, salt, and pepper. Marinate for at least 20 minutes.

  2. Thread chicken onto skewers. Grill or pan-cook over medium-high heat for 8–10 minutes, turning and brushing with extra BBQ sauce until fully cooked.

  3. In a large bowl, assemble mixed greens, cherry tomatoes, cucumber, red onion, corn, and cheese.

  4. Top salad with hot BBQ chicken skewers.

  5. Drizzle with dressing and serve immediately.

Notes

  • For added crunch, top with tortilla strips or croutons.

  • Make it vegetarian by replacing chicken with BBQ tofu or grilled halloumi.
