Ingredients
For the Chicken Skewers:

1 lb boneless chicken breast or thighs, cubed

1/2 cup BBQ sauce (plus more for brushing)

1 tbsp olive oil

Salt & pepper, to taste

Wooden skewers (soaked in water if grilling)
For the Salad:

4 cups mixed greens

1 cup cherry tomatoes, halved

1/2 cucumber, sliced

1/4 red onion, thinly sliced

1/2 cup grilled corn kernels (optional)

1/4 cup crumbled feta or shredded cheddar (optional)

Ranch or vinaigrette dressing, to serve
Instructions

Marinate the Chicken: Toss chicken cubes with BBQ sauce, olive oil, salt, and pepper. Marinate for at least 20 minutes.

Thread chicken onto skewers. Grill or pan-cook over medium-high heat for 8–10 minutes, turning and brushing with extra BBQ sauce until fully cooked.

In a large bowl, assemble mixed greens, cherry tomatoes, cucumber, red onion, corn, and cheese.
