2 large carrots (peeled and shredded or finely chopped)

1 can diced tomatoes (796ml or 28 oz)

1 small zucchini (shredded)

1 can black or kidney beans

drained and rinsed (19 oz or 540 ml)

½ cup ketchup

½ cup barbecue sauce

1 ½ tablespoons chili powder

½ teaspoon salt

3 cups flour (all purpose or whole wheat)

1½ tablespoons baking powder

1 teaspoon salt

¾ teaspoon garlic powder optional

¾ cup cold butter

¾ cup milk (additional if needed)

1 tablespoon melted butter

2 cups shredded cheddar cheese


Instructions

  • Preheat your oven to 375°F (190°C). In a large skillet, brown the ground beef over medium heat until fully cooked; drain any excess fat.
  • Add the carrots, bell pepper, onion, diced tomatoes, zucchini, and beans to the skillet. Stir in ketchup, barbecue sauce, chili powder, and salt. Mix well and let simmer for about 10 minutes.
  • While the mixture is simmering, prepare the biscuit topping. In a large bowl, combine the flour, baking powder, salt, and garlic powder. Cut in the cold butter until the mixture resembles coarse crumbs.
  • Stir in the milk gradually until a soft dough forms. If the mixture is too dry, add more milk as needed.
  • Spread the beef and vegetable mixture evenly in a greased 9×13 inch baking dish. Drop spoonfuls of the biscuit dough over the top.
  • Brush the biscuit dough with melted butter and sprinkle shredded cheddar cheese on top.
