1 lb flank steak, thinly sliced against the grain
3 cups broccoli florets (fresh or frozen)
2 tablespoons vegetable oil (or sesame oil for a nutty flavor)
3 tablespoons soy sauce (low sodium is a good choice)
2 tablespoons oyster sauce (for depth of flavor)
1 tablespoon cornstarch (for thickening the sauce)
2 cloves garlic, minced (fresh is best!)
1 teaspoon ginger, minced (adds a nice zing)
½ cup beef broth or water (to help the sauce come together)
Salt and pepper, to taste
Instructions
In a bowl, combine the sliced flank steak with 1 tablespoon soy sauce and the cornstarch. Toss until well coated, and let it marinate for about 10 minutes while you prep the rest.
In a large pot of boiling water, add the broccoli florets and cook for 2 minutes. Drain and set aside.
In a large skillet or wok, heat the vegetable oil over medium-high heat. When hot, add the marinated beef in a single layer. Let it sear for about 2-3 minutes without stirring, then toss until browned. Remove from the skillet and set aside.
In the same skillet, add a bit more oil if needed, then toss in the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
Pour in the remaining soy sauce, oyster sauce, and beef broth. Stir everything together and bring it to a gentle simmer.
Add the beef back into the skillet along with the blanched broccoli. Toss everything together until heated through and coated with sauce.
Taste and adjust seasoning with salt and pepper as needed. Serve hot over rice or noodles.
