1 pound of ground beef (85% lean)
1 medium onion, diced
3 cloves of garlic, minced
1 can (15 oz) of kidney beans, rinsed and drained
1 can (15 oz) of black beans, rinsed and drained
1 can (28 oz) of crushed tomatoes
2 tablespoons of tomato paste
2 cups of beef broth
2 tablespoons of chili powder
1 teaspoon of cumin
1 teaspoon of smoked paprika
1 teaspoon of oregano
Salt and pepper to taste
Optional toppings: shredded cheese, sour cream, chives, or jalapeños
Instructions
In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if needed.
Toss in the diced onion and minced garlic and sauté until the onion is translucent, about 3-4 minutes.
Add the chili powder, cumin, smoked paprika, oregano, and a pinch of salt and pepper. Stir and cook for an additional minute until fragrant.
Pour in the crushed tomatoes, tomato paste, kidney beans, black beans, and beef broth. Stir to combine.
Increase the heat to high until it starts to boil, then reduce to low. Cover and let it simmer gently for at least 30 minutes.
After simmering, taste and adjust the seasoning if needed.
Ladle the chili into bowls and top with your favorite toppings.
