  • 1 lb ground beef

  • 1 onion, finely chopped

  • 1 packet taco seasoning mix

  • 1 can (10 oz) red enchilada sauce

  • 1 can (4 oz) diced green chilies

  • 8 small corn tortillas, cut into strips

  • 1 1/2 cups shredded cheddar cheese

  • 1 cup shredded Monterey Jack cheese

  • 1 cup sour cream (optional, for topping)

  • 1 tbsp olive oil

  • Salt and pepper to taste

  • Fresh cilantro (optional, for garnish)


Instructions

  • Preheat the oven to 375°F (190°C).

  • Cook the beef: Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.

  • Season the beef: Add the chopped onion to the skillet and cook for 2-3 minutes until softened. Stir in taco seasoning mix, diced green chilies, and salt and pepper. Add 1/2 cup of enchilada sauce and simmer for 5 minutes.

  • Layer the casserole: In a greased 9×13-inch baking dish, spread a thin layer of the remaining enchilada sauce. Place half of the tortilla strips in the bottom, followed by half of the beef mixture and cheese. Repeat with another layer of tortilla strips, beef mixture, and the remaining cheese.

  • Bake: Cover the casserole with aluminum foil and bake for 25-30 minutes, or until the cheese is melted and bubbly.

  • Serve: Remove from the oven and let it rest for 5 minutes. Top with sour cream and fresh cilantro if desired.

  • Serve hot and enjoy!

Notes

  • For a spicier kick, add some chopped jalapeños or increase the heat with extra chili powder.

  • You can make this casserole ahead of time and refrigerate it before baking. Just add 10-15 extra minutes to the cooking time if baking from cold.
