Ingredients
Scale
2 cups cooked jasmine rice (preferably cold)
300 grams of beef (flank steak or sirloin, thinly sliced)
2 tablespoons of soy sauce
1 tablespoon of oyster sauce (optional)
2 tablespoons of vegetable oil (or sesame oil)
2 large eggs, beaten
1 cup of mixed vegetables (like peas, carrots, and bell peppers)
3 green onions, chopped
3 cloves of garlic, minced
Salt and pepper, to taste
1 teaspoon of freshly grated ginger (optional)
Instructions
Prep your ingredients: Make sure your rice is cold. This helps the grains stay separate and gives the best texture. Chop your veggies, green onions, and slice your beef thinly.
Marinate the beef: In a small bowl, combine the sliced beef, soy sauce, and oyster sauce if using. Let it marinate for about 15 minutes.
Heat your pan: In a large skillet or wok (get it nice and hot!), pour in the vegetable oil and let it shimmer.
Cook the beef: Add the marinated beef to the pan in a single layer. Let it sauté for about 2-3 minutes until it is browned and cooked through. Remove it from the pan and set aside.
Scramble the eggs: In the same pan, add the beaten eggs. Allow them to cook for about a minute until they’re just set, then remove them from the pan.
Aromatics time: Add a splash more oil to the pan if needed, then toss in the minced garlic, ginger (if using), and veggies. Stir-fry for about 2-3 minutes until they're tender but still vibrant.
Combine it all: Return the beef and scrambled eggs to the pan. Add the cold rice, breaking up any clumps with your spatula. Toss everything together without overmixing.
Season: Add pepper and more soy sauce to taste. Stir in the chopped green onions and give it one last toss.
Plate and serve: Dish up your Beef Fried Rice hot, garnished with a sprinkle of fresh green onions.
