2 pounds beef chuck roast, cut into 1-inch cubes
4 medium carrots, sliced into rounds
3 medium potatoes, diced (Russets work great!)
1 large onion, finely chopped
3 cloves fresh garlic, minced
4 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper, to taste
2 tablespoons olive oil
Optional: 1 cup frozen peas
Season the beef cubes generously with salt and pepper. Pat them dry with a paper towel.
In a skillet over medium-high heat, add the olive oil. Brown the beef in batches on all sides.
Chop your onions, carrots, and potatoes while the meat is browning.
Place the browned beef in the slow cooker and add the chopped onions, carrots, and potatoes on top.
In a medium bowl, mix beef broth, Worcestershire sauce, minced garlic, thyme, and rosemary. Pour over beef and veggies, and stir gently.
Cover the slow cooker and set it on low for about 8 hours or high for 4 hours.
If using frozen peas, add them about 30 minutes before serving. Adjust salt and pepper to taste.
