  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, sliced into rounds
  • 3 medium potatoes, diced (Russets work great!)
  • 1 large onion, finely chopped
  • 3 cloves fresh garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Optional: 1 cup frozen peas

  • Instructions

  • Season the beef cubes generously with salt and pepper. Pat them dry with a paper towel.
  • In a skillet over medium-high heat, add the olive oil. Brown the beef in batches on all sides.
  • Chop your onions, carrots, and potatoes while the meat is browning.
  • Place the browned beef in the slow cooker and add the chopped onions, carrots, and potatoes on top.
  • In a medium bowl, mix beef broth, Worcestershire sauce, minced garlic, thyme, and rosemary. Pour over beef and veggies, and stir gently.
  • Cover the slow cooker and set it on low for about 8 hours or high for 4 hours.
  • If using frozen peas, add them about 30 minutes before serving. Adjust salt and pepper to taste.
