1 lb. beef stew meat and chuck
1 tablespoon olive oil
1 medium onion, diced
2 cloves fresh garlic, minced
3 carrots, sliced
2 stalks celery, chopped
1 potato, diced
1 can (14.5 oz) diced tomatoes, with juice
4 cups beef broth
1 teaspoon dried thyme
1 bay leaf
Salt and pepper to taste
1 cup green beans, trimmed and cut
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 4-5 minutes.
Add the minced garlic and sauté for an additional minute.
Increase the heat slightly, then add the beef stew meat. Sear it on all sides until browned, about 5-7 minutes.
Add in the carrots, celery, and potatoes. Stir to combine.
Add the diced tomatoes and pour in the beef broth, ensuring it covers the ingredients.
Add thyme, bay leaf, salt, and pepper. Bring to a gentle boil.
