  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar, packed
  • 2 large eggs
  • ½ cup (120 ml) vegetable oil (or melted coconut oil)
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups (190 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 1 cup (175 g) semi-sweet chocolate chips

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, eggs, oil, and vanilla until well combined.
  • In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  • Gradually add the dry ingredients to the wet mixture and stir gently until just blended.
  • Gently fold in the chocolate chips.
  • Grease a 9×5 inch loaf pan or line it with parchment paper. Pour the batter into the pan.
  • Bake for 55-65 minutes, or until a toothpick inserted comes out clean.
