Instructions
- Preheat your oven to 350°F (175°C).
- Melt butter in a skillet over medium heat. Add chopped onions and cook until translucent.
- Stir in fresh thyme, salt, pepper, and red pepper flakes to taste.
- Add cooking sherry to deglaze the pan, letting it reduce for about 2 minutes.
- Pour in the beef stock and bring to a simmer. Mix cornstarch with water to create a slurry, then stir it into the au jus to thicken.
- Slice the French baguette in half lengthwise and toast it lightly in the oven.
- Layer thin slices of roast beef and Gruyere cheese on the baguette.
- Return the sandwich to the oven to melt the cheese, about 5 minutes.
- Serve the sandwiches with a small bowl of au jus for dipping.
Notes
