Instructions

  • Preheat your oven to 350°F (175°C).
  • Melt butter in a skillet over medium heat. Add chopped onions and cook until translucent.
  • Stir in fresh thyme, salt, pepper, and red pepper flakes to taste.
  • Add cooking sherry to deglaze the pan, letting it reduce for about 2 minutes.
  • Pour in the beef stock and bring to a simmer. Mix cornstarch with water to create a slurry, then stir it into the au jus to thicken.
  • Slice the French baguette in half lengthwise and toast it lightly in the oven.
  • Layer thin slices of roast beef and Gruyere cheese on the baguette.
  • Return the sandwich to the oven to melt the cheese, about 5 minutes.
  • Serve the sandwiches with a small bowl of au jus for dipping.

Notes
