1 pound fresh green beans, trimmed and cut into 1-inch pieces
1 can (10.5 ounces) cream of mushroom soup
½ cup milk
1 cup crispy fried onions
1 cup fresh mushrooms, sliced
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
In a large pot of salted boiling water, blanch the green beans for about 4-5 minutes until they’re bright green but still crunchy. Drain and set aside.
In a skillet over medium heat, add your olive oil. Once hot, toss in the sliced mushrooms and cook until they release their juices and start to brown, about 5-7 minutes.
In a large mixing bowl, combine the cream of mushroom soup, milk, garlic powder, and sautéed mushrooms. Stir until well blended. Season with salt and pepper to taste.
Add in the blanched green beans and half of the crispy fried onions. Gently mix until everything is well coated.
Pour the mixture into a greased 9×13 inch casserole dish. Spread it evenly and top with the remaining crispy fried onions.
Place the casserole in the preheated oven and bake for about 25-30 minutes, or until hot and bubbly.
