Ingredients
3 very ripe bananas
mashed
2 eggs
¼ cup olive oil or melted coconut oil
¼ cup honey or maple syrup
1 tsp vanilla extract
1 ½ cups whole wheat flour
1 tsp baking soda
½ tsp cinnamon
½ tsp salt
Optional: ½ cup chopped walnuts or dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, mash the ripe bananas until smooth.
- Add the eggs, olive oil (or coconut oil), honey (or maple syrup), and vanilla extract to the mashed bananas and mix well.
- In another bowl, combine the whole wheat flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If desired, fold in the walnuts or dark chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For a sweeter loaf, you can increase the honey or maple syrup by 1 tablespoon. This banana bread can be stored at room temperature for up to 3 days or frozen for longer storage.
