4 boneless, skinless chicken thighs
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
Salt and pepper to taste
Juice of 1 lime
1 cup fresh cilantro leaves
1 jalapeño, seeded
1/2 cup sour cream
1/2 cup mayonnaise
1 tablespoon lime juice
Salt to taste
Instructions
In a bowl, mix together the olive oil, minced garlic, cumin, paprika, oregano, lime juice, salt, and pepper. Add the chicken thighs and coat well in the marinade. Let it marinate for at least 30 minutes, or up to overnight.
Preheat your grill or oven to medium-high heat (about 400°F/200°C).
In a blender, combine the cilantro, jalapeño, sour cream, mayonnaise, lime juice, and salt. Blend until smooth.
Place the marinated chicken on the grill or in a baking tray. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Let the chicken rest for about 5 minutes. Then slice it into bite-sized pieces.
