For the Cookies:
- 1 ½ cups all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp milk
For the Cream Filling:
- ½ cup heavy cream
- 2 tbsp sugar
- 1 egg yolk
- 1 tbsp cornstarch
- ½ tsp vanilla extract
For the Chocolate Glaze:
- ½ cup semi-sweet chocolate chips
- 2 tbsp heavy cream
Instructions
1️⃣ Make the Cookies:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy. Beat in egg, vanilla, and milk.
- Gradually mix in dry ingredients until combined.
- Scoop tablespoon-sized dough onto the baking sheet and bake for 10-12 minutes, or until edges are lightly golden. Cool completely.
2️⃣ Prepare the Cream Filling:
- Heat cream and sugar in a saucepan over medium heat.
- In a small bowl, whisk egg yolk and cornstarch, then slowly add warm cream mixture, whisking constantly.
- Return to heat and cook until thickened (about 2 minutes). Remove from heat and stir in vanilla. Let cool.
3️⃣ Make the Chocolate Glaze:
- Melt chocolate chips and heavy cream together until smooth.
4️⃣ Assemble the Cookies:
- Spread custard on the flat side of one cookie and top with another.
- Spoon or drizzle chocolate glaze over the top.
5️⃣ Chill & Serve:
- Refrigerate for 15 minutes to set, then enjoy!
