For the Cream Filling:

  • ½ cup heavy cream
  • 2 tbsp sugar
  • 1 egg yolk
  • 1 tbsp cornstarch
  • ½ tsp vanilla extract

For the Chocolate Glaze:

  • ½ cup semi-sweet chocolate chips
  • 2 tbsp heavy cream

Instructions

1️⃣ Make the Cookies:

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, baking powder, and salt.
  • In another bowl, cream butter and sugar until light and fluffy. Beat in egg, vanilla, and milk.
  • Gradually mix in dry ingredients until combined.
  • Scoop tablespoon-sized dough onto the baking sheet and bake for 10-12 minutes, or until edges are lightly golden. Cool completely.

2️⃣ Prepare the Cream Filling:

  • Heat cream and sugar in a saucepan over medium heat.
  • In a small bowl, whisk egg yolk and cornstarch, then slowly add warm cream mixture, whisking constantly.
  • Return to heat and cook until thickened (about 2 minutes). Remove from heat and stir in vanilla. Let cool.

3️⃣ Make the Chocolate Glaze:

  • Melt chocolate chips and heavy cream together until smooth.
