Description
Birria Enchiladas are a delicious twist on traditional enchiladas, filled with tender meat and smothered in rich sauce. Perfect for any gathering!
Ingredients
3 lbs beef chuck roast (or short ribs
lamb
or goat)
6 dried guajillo chiles
4 dried ancho chiles
1 large white onion
6 garlic cloves
2 bay leaves
1 cinnamon stick
3 whole cloves
1 tsp Mexican oregano
1 tsp cumin seeds (or ground cumin)
4 cups beef broth
16 corn tortillas
2 cups enchilada sauce (homemade
store-bought
or birria consomé)
2 cups shredded Oaxaca or Monterey Jack cheese
½ cup crumbled Cotija cheese
Fresh cilantro
for garnish
Instructions
- In a large pot, combine the beef, guajillo chiles, ancho chiles, onion, garlic, bay leaves, cinnamon stick, cloves, oregano, cumin, and beef broth. Bring to a boil, then reduce to a simmer. Cook until the meat is tender, about 2-3 hours.
- Once the meat is cooked, remove it from the pot and shred it using two forks. Strain the broth and reserve as birria consomé.
- Preheat your oven to 350°F (175°C). Dip each tortilla in the hot birria consomé to soften.
- Fill each tortilla with shredded meat and some cheese, then roll up and place seam-side down in a baking dish.
- Pour enchilada sauce over the rolled tortillas and sprinkle with remaining cheese. Bake for 20 minutes or until the cheese is melted and bubbly.
- Garnish with crumbled Cotija cheese and fresh cilantro before serving. Enjoy!
Notes
For a spicier kick, add more chiles or serve with sliced jalapeños. Leftover birria consomé makes a great dipping sauce.
